Grown between 1,550 and 1,856 m.a.s.l. around La Unión in Colombia's Nariño region, this coffee comes from four smallholder farms cultivating the Castillo variety. The area's mountainous terrain and cooler growing conditions allow the coffee cherries to mature gradually, helping develop sweetness, structure and lively acidity.
The coffee is processed using the washed method, preserving clarity while allowing the natural character of the Castillo variety and its terroir to remain at the centre of the cup. The result is a beautifully balanced Colombian coffee: sweet and comforting enough for everyday espresso, yet clean and juicy enough to shine as filter.
